Dry Shrimp Ceviche

Ingredients:
1 lb medium ground beef in boxes (can be pork, goat, chicken, beef)
1 medium tomato, diced 1 bell pepper
medium
diced 1 medium onion diced
1 / 2 cup passion fruit concentrate (or chicha)

vinegar 1 tablespoon chopped cilantro 1 cup ( cilantro)
halved 2 cloves garlic 1 tsp cumin
powder
-salt and pepper to taste
2 tbsp olive oil
1 tablespoon achiote paste (achiote) if they can not use envelopes with achiote or bijol goya

Preparation:
We heat the oil in the pan then add the tomatoes, peppers, onions, garlic, 1 / 2 cup of coriander, achiote, salt, pepper, cumin and let cook for 10 minutes then add the meat and vinegar, let cook for incorporating the flavors for about 15 minutes, then cover with water, cover and let cook until meat is tender and sauce has taken consistency, that is where we add the passion fruit concentrate or chicha and the rest of the cilantro, stir, cover and put out the fire.
Serve with yellow rice and fried sweet or roasted.
